Plaza III Key Lime Pie

Key Lime Tart

Ingredients:

  • 4 Egg yolks
  • 8 oz of key lime juice
  • 1.5 cups of condensed milk

Preparation:

  1. Whip milk into egg yolks for 5 minutes on high speed
  2. Stir key lime juice into egg and milk mixture


Meringue

Ingredients:

  • 4 Egg whites
  • ½ Cup granulated sugar

Preparation:

  1. Whip the egg whites and sugar until soft peaks
  2. Do not over whip the egg whites or they will become dry and tough
  3. Cover the top of the tort with whipped meringue, forming stiff peaks
  4. Brown with torch


Crust

Ingredients:

  • 1.5 cup graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tbsp butter melted

Preparation:

  1. Preheat oven to 375°
  2. Mix graham cracker crumbs, sugar, and butter in a small bowl
  3. Press the crumb mixture into a 9” pie pan
  4. Bake for 7 minutes
  5. Cool for at least 30 minutes
