Key Lime Tart
Ingredients:
- 4 Egg yolks
- 8 oz of key lime juice
- 1.5 cups of condensed milk
Preparation:
- Whip milk into egg yolks for 5 minutes on high speed
- Stir key lime juice into egg and milk mixture
Meringue
Ingredients:
- 4 Egg whites
- ½ Cup granulated sugar
Preparation:
- Whip the egg whites and sugar until soft peaks
- Do not over whip the egg whites or they will become dry and tough
- Cover the top of the tort with whipped meringue, forming stiff peaks
- Brown with torch
Crust
Ingredients:
- 1.5 cup graham cracker crumbs
- 1/3 cup granulated sugar
- 6 tbsp butter melted
Preparation:
- Preheat oven to 375°
- Mix graham cracker crumbs, sugar, and butter in a small bowl
- Press the crumb mixture into a 9” pie pan
- Bake for 7 minutes
- Cool for at least 30 minutes
